There are dozens of Valentines Day cookie recipes for those mothers whose child informs her at bedtime that he or she needs to take cookies to school the next day for the Valentines Day party. For those mothers who believe in doing their baking from “scratch”, we have the perfect cookie recipe for you. These cookies are fast and easy, and turn out absolutely yummy.
Best of All Valentines Day Cookie Recipes: ¾ C. shortening (or butter – not margarine) Cream: Shortening, sugar and egg, beat until light and fluffy. Add: vanilla, lemon zest to the creamed mixture. Mix thoroughly. Dry ingredients: sift together and stir into the creamed mixture, adding the milk. Divide dough in half. Chill one hour. Remove one half from the fridge and roll out flat until about 1/8 inch thick. Using a cookie cutter, cut out individual cookies and place on greased baking sheet; cover with red sugar sprinkles. Repeat for the second half of the chilled dough. If you don’t have a heart-shaped cookie cutter, the top of a drinking glass or biscuit cutter will work fine, then the heart decoration can be created using our hint* below. Bake at 375° for 12 minutes. Makes 24 cookies. *Hint: using wax paper cut out a heart-shaped stencil to use in applying the red sugar sprinkles to the top of the cookie before baking. To make the stencil, take a square of wax paper approximately 3” x 3” square, fold in half and cut out a half heart from the folded side of the paper. Open it up and you will have a heart-shaped hole. Place on top of the raw cookie and sprinkle the red sprinkles inside the heart. Here’s another hint, add just a touch of red food coloring to the creamed mixture before adding the dry ingredients. Then once the cookies are baked you can frost with white or chocolate frosting using the same heart-shaped template.
