Easter Cookie Recipe

Everyone should have an Easter cookie recipe to help them celebrate a season of resurrected new life and new beginnings. Easter is celebrated in spring, when beautiful flower buds are beginning to awake to the warmth of the sun and the sound of birds and bees buzzing a happy tune.

It is for this reason that the perfect colors for Easter are bright pastels, like the early blooming tulips, daffodils, crocus’, hyacinths and morning glories. Their fragrant and lovely blooms are a comforting promise that summer will soon be here.

The longing to be outside in spring is what encourages Easter celebrations to be largely held outdoors. Part of a traditional celebration includes the ritual of hiding Easter eggs, sometimes filled with candy or small toys, for the children to hunt for.

Springtime edibles might include salads, gelatin, fried chicken and most of all sweets, sweets, sweets! In addition to the countless varieties of cookies, there are also crème pies, cakes, ambrosia salads and candies galore.

One of the many Easter cookie recipes that signify Easter is for a light and tasty frosted cookie, which is simply formed in the shape of a loosely tied knot. These cookies are the perfect Easter cookie recipe to display those happy, bright pastel colors of spring.

Easy Easter Cookie

  • 1/2 c butter
  • 3/4 c sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1/4 c milk
  • 1/4 c vegetable oil
  • 3 3/4 cups all-purpose flour
  • 5 tsp baking powder

Icing ingredients: 4 cups confectioners' sugar 1/2 cup butter, softened 1 tsp vanilla extract 1 tsp almond extract 3 Tbs milk 3 drops food coloring (optional)

Preheat oven to 350F. Grease cookie sheets. In a large bowl, blend together sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in vanilla and almond extract, milk and oil.

Combine the flour and baking powder and blend into the wet mixture. Form the dough into 1 inch balls, then place on a lightly floured surface. Roll the balls out into rods about five inches long. “Tie” the rods into loose knots and place each cookie “knot” one inch apart on the greased cookie sheets.

Bake 10 minutes, until golden brown. When cookies are cool, dip the cookie bow cookies into the icing.

To make the icing, cream together the confectioners' sugar, butter, and vanilla and almond extracts. Beat in milk, one tablespoon at a time, and then stir in the food coloring if desired.
