Easter Cake Recipe

Mom’s special Easter Cake recipe is what makes Easter so special. In our family Easter is like Christmas when all our family members gather together. My children are not very fond of Simnel Cake or the Easter Bunny cake (they say they are very childish).

My mother knows many Easter bunny cake recipes but she bakes a special cake for them and they enjoy it very much. This is my mother's Easter cake recipe that I am sharing with you.

Ingredients:

  • 225g unsalted butter (225g more to grease the cake pans)
  • Sultanas
  • Raisins
  • Currants
  • 100g glace cherries halved
  • 50g each dates and dried figs
  • Zest and juice of 2 oranges
  • 100ml brandy
  • 225g dark brown sugar
  • 4 eggs 225g plain flour sifted
  • 1 tsp each (powdered): Cinnamon, nutmeg and cloves
  • 100g walnuts, chopped
  1. Preheat oven to 300 F. Grease and line a deep 9-inch by 21/2-inch round cake pan with greaseproof paper. Chop up the dates and dried figs.
  2. In large pan, put sultanas, raisins, currants, cherries, dates, figs, orange zest and juice, and brandy. Bring to boil. Then remove from heat and leave to soak for 30 minutes.
  3. Whisk together sugar and butter till fluffy. Beat the eggs. Add flour, spices, nuts and the soaked fruit to the bowl.
  4. Put the cake mixture into prepared tin. Shake tin firmly to level the mixture. Wrap brown paper around tin and secure with string. Bake 31/2 hours. The cake will take some time to cool. To store, wrap in plastic wrap and foil and place in airtight container.
  5. After 2 weeks unwrap, prick all over, and sprinkle 1 tablespoon brandy. Let soak, wrap up again. Repeat this part 2 weeks later, or 3 days before eating. This cake can be stored for several months.
