BABY SHOWER RECIPE IDEAS: PARMESAN APPETIZER PUFFS

Parmesan puff recipe with chopped mushrooms, olives, and green onions, along with Parmesan cheese, sour cream, and pastry ingredients.

INGREDIENTS: 1 1/2 cups flour 1 teaspoon salt 1 cup margarine 1/2 cup sour cream 2 tablespoons grated Parmesan cheese 2 tablespoons chopped green onions 2 tablespoons chopped mushrooms 2 tablespoons chopped ripe olives

PREPARATION: Mix flour and salt; cut margarine in until mixture begins to form a ball. Blend in sour cream. Divide dough into 4 parts. Wrap each part and chill several hours. Heat oven to 350 degrees. On floured board, roll each section into a 12 x 6-inch rectangle. Sprinkle one-half each rectangle with either cheese, onion, mushrooms or olives. Fold dough over to make a 6-inch square. Cut the 6-inch square into 2-inch squares, pressing edges. Continue until all dough is prepared. Bake on ungreased cookie sheet at 350 degrees for 20 to 25 minutes. May be prepared in advance and refrigerated, then baked for 30 minutes. Makes 36 appetizers.

BABY SHOWER RECIPE IDEAS: MINI PITA CHICKEN SANDWICHES

I was asked to make sandwiches for a baby shower last year, and I wanted to make something different than the typical egg salad on white bread cut into triangles.

PREPARATION: So I poached some chicken breasts, chopped up the meat and added some chopped cucumber and mayo, a tiny amount of mustard, a bit of onion and garlic powder too. I put a little lettuce into each mini pita bread, stuffed them with a bit of the chicken mix and added a tiny wedge of tomato to garnish. People raved about them! And it was so simple!

BABY SHOWER RECIPE IDEAS: ONION APPETIZER ROUNDS

INGREDIENTS: 12 rounds white bread - remove crusts and cut in 2-inch rounds, 12 thin 2-inch slices sweet onion, 12 scant tablespoons mayonnaise paprika

PREPARATION: Toast bread rounds. Place a slice of sweet onion on toast, then spoon mayonnaise on top. Broil until mayonnaise begins to bubble. Sprinkle with paprika. Makes 12 appetizers.
